Whether you meet Chef Luca Bordino face to face or taste his menu, you will never forget him. After meeting him in Lisbon, it was clear he is one of the few Chef’s that should not only be allowed out of the kitchen but should have his own TV show. His personality is infectious and his cuisine – world class. He is fascinated by the vibration, energy, scents, flavours, colours of the kitchen. He has true Portuguese passion and shows no signs of slowing down.

Chef Luca’s dishes take center stage at Maxime Hotel restaurant. The hotel showcases how Lisbon is still a mysterious city with a world happening behind closed doors. At Maxime Hotel the show is not just on the stage, it is behind the scenes in the kitchen, behind the bar, it is in every corner of the hotel. Lady Maxime is provocative and glamorous, she has a story to tell.

On a rainy night in Lisbon we experienced a curated tasting menu from Chef Luca. He did not disappoint, he overwhelmed, hitting all of our five senses. His current location of Portugal mixed with his Italian and French roots result in a daring menu that delivers. Chef Luca is a man of the sea.

“In the world of cookery we are never going to please everyone. The most important thing is to know how to filter valuable information from the critics, following and adjusting our recipes and our way of being.”

Chef Luca

Entertainment is essential to life and Lisbon sees the emergence of the first nightclubs, gambling establishments, dancing clubs and cabarets, among them, Club Maxim’s, one of the icons of Lisbon’s nightlife at that time.
